Did you know there are two primary types of popcorn kernels? "Butterfly" popcorn and "Mushroom" popcorn.
Gourmet mushroom popcorn kernels, when popped, are largely ball shaped and have few "wings." The popcorn is rounded at the top, like the cap of a mushroom, and is less fragile than butterfly popcorn. Mushroom popcorn has a longer freshness timeframe if stored (sealed) in an airtight container. It is used primarily for sweet popcorn flavors, like GIGPs Georgia's BEST Caramel Corn. We use it almost exclusively in many of our savory popcorn flavors.
Butterfly popcorn kernels are irregular in shape and have a number of "wings." This is the popcorn you find at the grocery store under a number of different brand names. Some say butterfly popcorn has a greater tenderness and less noticible hulls. This popcorn is used primarily for salt and butter flavoring and does not last for long periods of time when popped.
